Đun sôi nước rồi cho mì vào luộc theo hướng dẫn của gói. Sau đó cho mì ra tô, để nguội khoảng 10 phút cho sợi mì hơi ráo nước. Thêm trứng và 50g phô mai bào vào. Đảo nhẹ cho các nguyên liệu kết hợp với nhau sao cho tất cả các sợi mì cần được phủ đều một lớp trứng và phô mai.
Đổ mì vừa trộn vào khuôn dài có lót sẵn. Sử dụng muỗng nhấn mì xuống đáy khuôn, bọc màng bọc lại, cho vào tủ lạnh để 15 phút cho chỗ mì thêm cứng cáp.
Cho khuôn mì ra khỏi tủ lạnh, bỏ mảng bọc, dùng dao sắc cẩn thận cắt khối vì đang là hình chữ nhật làm đôi, thành hai hình vuông. Đun nóng 30ml dầu ăn trong chảo lớn ở nhiệt độ vừa. Dùng 1 muỗng nhẹ nhàng lấy các khối mì hình vuông ra khỏi khuôn, cho vào chảo chiên. Chiên mỗi bên cho đến khi vàng, khoảng 3 phút. Rắc lên trên các miếng mì vụn phô mai và kim chi thái nhỏ. Chiên nốt mặt còn lại cho đến khi vàng.
Ốp hai miếng mì vào nhau, nhấn nhẹ xuống để phô mai tan chảy. Cho mì tôm chiên phô mai lên đĩa, cắt chéo cho dễ thưởng thức nhé! Món mì kẹp phô mai chiên lên như thế này sẽ béo và hấp dẫn lắm đấy.
